因为这次的材料不是特别的准确, 不过没有关系, 味道依旧很好, 而且可以变换更多, 怎样做都没有错!
老婆饼的制作只要分[u]馅, 面皮和油酥3个部分[/u], 来看看准备的材料吧: 今天做的是8个老婆饼的量

水 65克
砂糖 60-65克
菜油 2 勺子
糕粉 80克 (我这次没有糕粉, 用的是糯米粉,在微波炉里中高火打4分钟即可)
白芝麻 2 勺提前炒一下
冬瓜糖 50克
椰丝 8克

面粉 130克(130克的概念就是小号饭碗一碗, 我没有分高低筋面粉, 总觉得有些麻烦, 只用一般的面粉也差不多)
砂糖 1 勺
油 25克
水 60

面粉 110克
油 55克

水+砂糖,煮至砂糖溶化,然后加入油等至溶化。
熄火待至3分钟后,加入糕粉(或者熟糯米粉)搅匀,
再加入椰丝、已磨碎的冬瓜糖和炒香的芝麻揉匀即可。

好啦, 馅做好了, 放进冰箱吧.

面粉加入砂糖、水和油,揉匀即可。用量见上面的准备材料.
醒面20分钟.

面粉+油,揉匀即可。

好拉, 下面的两个面团就是油酥团和面皮团拉.

这些可爱的小圆球分别是: 面皮, 油酥, 内陷. 大小就和元宵差不多, 没有特定限制. 现在一切都准备好了!

开始制作拉, 把一个面皮小团压扁, 擀成皮, 中间放一个油酥团, 包起来.

擀成长方形, 卷起来, 继续擀成长方形, 重复3次这个步骤.

最后, 把这个可爱的小面卷竖起来, 一压, 擀好, 油酥皮就做好了. (或者平着叠好也都可以的)

下面这就是擀好的油酥皮, 中间放内陷, 包好, 反过来用手掌一压.

用叉子或者牙签扎些小眼儿, 涂上鸡蛋液.

老婆饼是广州一带的名小吃,它还有个雅号叫“冬茸酥”。关于老婆饼,有这样一个传说:以前有一对恩爱但家庭贫穷的夫妇,由于老父病重,家中无钱医治,媳妇只好卖身进入地主家,挣钱给家翁治病。失去妻子的丈夫并没有气馁,研制出一道味道奇好的饼,最终以卖饼赚钱赎回了妻子,重新过上了幸福生活。这道美食流传开来后,便被人们称作老婆饼。你没有想到这小小的老婆饼还有这样一段忠孝恩爱的故事吧,卖老婆饼可以重新过上幸福生活,比起武大郎卖烧饼却丢妻丧命来,这老婆饼的功德要圆满得多。
